Ingredients

  • olive oil
  • 1 onion, diced
  • 2 cloves garlic
  • 1 red capsicum, cut into small pieces
  • 2 ribs celery, also cut into small pieces
  • 3 potatoes, cubed
  • 2x 400g can black beans, drained
  • salt
  • black pepper
  • smoked paprika
  • oregano
  • cumin
  • garlic powder
  • cayenne pepper
  • ~4 cups vegetable stock
  • some fresh parsley

Instructions

  1. in a large pot with oil (medium heat), cook onion, garlic, capsicum, celery, and potatoes for 5-7 minutes. stir frequently to avoid burning.
  2. add the black beans to the pot, and season these generously with each of the spices (do not be afraid of adding too much smoked paprika there is no such thing). stir the beans into the vegetables.
  3. add around 4 cups of vegetable stock, adjusting depending on how much liquid you appreciate.
  4. bring the soup to a boil, then allow to simmer, covered, for 20-30 minutes. adjust spices according to taste.
  5. once the potatoes are soft it is ready to serve. once the soup is not too hot, stir the fresh parsley through the liquid.
