Ingredients

  • 150g vegan butter
  • 1/2 cup light brown sugar
  • 7tbsp golden syrup
  • 1tbsp plant milk of some kind
  • 3 1/2tsp ground ginger
  • 3 1/2tsp ground cinnamon
  • 1/4tsp ground cloves
  • orange zest (follow your heart)
  • black pepper (also follow your heart)
  • 3/4tsp bicarb soda
  • 3 cups + 2tbsp all-purpose flour

Instructions

  1. preheat oven to 180°c or 160°c fan force.
  2. place butter, sugar, golden syrup, and milk in a medium saucepan over a low heat and stir until just melted. remove from heat.
  3. add ginger, cinnamon, cloves, orange zest, black pepper, & bicarb soda, whisk until smooth.
  4. pour into separate large bowl.
  5. add flour and stir until no dry patches remain. wrap the dough in foil and refrigerate for a couple of hours or overnight until firm.
  6. roll the dough out on a floured surface (thickness depends on biscuit preference). cut with cookie cutters
  7. bake cookies for 8-15 minutes depending on desired crispiness/softness.
