i cooked this with the oven too hot so it needed to cook slightly longer in the middle…. still very nice. i have adjusted the oven temperature in this recipe accordingly!
Ingredients
- 3 large overripe bananas
- 2tsp vanilla extract
- 1/2 cup + 2tbsp caster sugar
- 1 heaped tsp cinnamon
- 200ml plant milk of some kind
- 2 cups + 1tbsp plain flour
- 1tsp baking powder
- 1 pinch/salt
- 1 cup raspberries & blueberries (any ratio)
- 2/3 cup dark chocolate chips
Instructions
- preheat oven to 175°c or 155°c fan force.
- line a suitable tin with baking paper.
- use a fork to thoroughly mash bananas in a large bowl.
- add vanilla, sugar, cinnamon, & milk. mix well.
- add flour, baking powder, & salt. fold with a silicone spatula to combine roughly.
- once combined, add the berries & chocolate chips. also fold these in, making sure you don’t fold more than necessary.
- transfer mixture to the lined tin and bake for an hour. after an hour, check with a knife or skewer to see if any of the batter sticks. if it does, wait five more minutes and test again. (cover with foil if the top starts to brown too much while doing this)
- once your knife or skewer comes out clean, remove from the oven and sit for 10 minutes in the tin. after 10 minutes transfer to a wire rack.
serve it forth <3
